A few days ago, I decided to cook a recipe that I have been wanting to try it on my own. Yes,yes. It is the one in the picture above. It is 'Buttermilk Sauce with Tempura Fried Chicken'.

I remembered my first attempt on cooking this recipe. The buttermilk sauce turned out as a solid custard as a result of too much corn flour. Lol. At that time, I was so sad of myself because every time I cook a new recipe, it will be a fail. I thought that I am a bad cook. But you know, if you fail once, does not mean you will fail all the time. It takes patience for you to achieve something. Cooking requires skill so of course, practices are also needed in order to sharpen the skill.

So today, I want to share the recipe, and making it as my recipe journal in case I forgot how. It is actually an easy recipe. The ingredients are as the following:

Chicken:
  1. Tempura flour/Kentucky Fried Chicken flour
  2. Pieces of cut chicken meat
Sauce:
  1. 1/2 of butter
  2. 1/2 of a can of evaporated milk
  3. A few curry leaves
  4. 2 small chilies (optional)
  5. A clove of garlic
  6. 1/2 of onion
  7. Corn flour
  8. Salt
  9. Sugar
Steps:  
  1. Heat up oil in a frying pan.
  2. Take a bowl and spoon some tempura flour into it. Add water to turn it into a thick batter. Once it turns into a batter, add the chicken in and mix it altogether.
  3. Once all of the chicken are coated with batter, fry it in a hot oil until golden brown.
  4. While waiting for the chicken to fry, prepare the buttermilk sauce. Heat up a pot with butter in it. 
  5. Once the butter melt, saute the curry leaves, chopped garlic, and chopped white onion altogether. Adding chopped chilies is optional but I recommend you to do so as it will give a bit taste of spiciness.
  6. Pour evaporated milk once the smell of the sauteed ingredients rise up.
  7. To thicken the sauce, add a little corn flour into a cup and pour a little water in it. Mix it well and add in two/three teaspoon of it into the pot.  
  8. Of course, a dish would not be completed if there is no salt and sugar. Therefore, add pinches of salt and sugar. Adjust the taste of the sauce by your own ideal taste and satisfaction.
  9. Add the fried chicken into buttermilk sauce and mix it well. You're done! 
There you go! It is an easy peasy recipe where you can cook and enjoy it anytime. You can either serve it with white rice or just eat it straight from the pot...Ok I was just joking about that. Hope you enjoy this recipe!
